Salads and LUNCH in a jar!

For the last few weeks I've been experimenting with salads and snacks in a jar.  I've seen tons of posts on them all over the internet and pinterest and wanted to see if they really would work for us.

Well, the few I tried worked super well, so this week is my first official FULL week of salads and lunches in a jar.  After a few hours of work, here's what my fridge looks like now:


The bottom shelf is full of half pint jars for snacks and breakfasts.  They are all about 1 cup per jar.  

*cottage cheese and canned fruit cocktail (light style)
*vanilla yogurt with sliced strawberries and a honey drizzle (chocolate syrup drizzle is yummy too!)
*baked ham and cheese frittata
*apples and peanut butter


The middle shelf :
*sliced strawberries
*hard boiled egg halves
*chocolate pudding with whip cream

The top shelf (this is the grown ups shelf):
*mushroom and asparagus fritatta
*chef salad
*curry chicken salad with mixed greens
*Santa Fe salad

The salads are in the new pint and a half jars (the regular quart jars work fine too, but I wanted to try these for fun!).



Garlic Ranch Chef Salad

The chef salad is lined up in the jar  as follows:

romaine and iceburg mix of lettuce
cheese
hard boiled eggs
chopped baby asparagus
shredded chicken
grape or cherry tomatoes
garlic ranch dressing




Curried Chicken Salad with Mixed Greens


The Curried Chicken Salad is an experiment, and since you don't want the lettuce touching the dressing, I put the mixed chicken salad (any recipe you like) on the bottom, then added a folded iceberg lettuce leaf on top, then filled with the mixed greens.  So if that iceberg leaf is soggy, we can just toss it.



Santa Fe Salad with Weight Watchers Dressing


This is the one I'm most excited about!  This is a new one for us.  I found the dressing on a Weight Watchers email and thought I'd give it a try... and it is DELICIOUS!


mixed greens
quinoa (we're trying it for the first time)
frozen and rinsed corn
diced red pepper
black beans
shredded chicken
Santa Fe Dressing

If you're interested, this dressing is worth trying!

Weight Watchers Santa Fe Dressing
6 Tbs mayo (we used the one made with olive oil)
3 Tbs freshly chopped cilantro
3 Tbs water
1 minced green onion
1 fresh lime, squeezed
2 tsp sugar
1/2 tsp chili powder

Add all ingredients to a jar and shake well.  
(This made enough for 5 jars salad --2 Tbs or so in the bottom of each.)

So excited for a healthy eating week!

  1. This looks GREAT! Question though - do you eat right out of the jar or do you dump it into a bowl or plate and then eat it?

    1. Hi Amanda! I pull out about half the dressing and put in a bowl, then shake everything up really well, and dump that on top and toss. Super easy!
