The Lunch Quandry--Pizza Rolls

Quick and Easy Lunches
Recipe #1  Make these pizza rolls on the weekend and put in a big freezer bag.  Pop them frozen into lunch bags and they thaw by lunch. Can be eaten cold, or reheated in the microwave.  Yum for my tum.

Pizza Rolls (freezer friendly)

1 batch of pizza dough or tube of pizza dough from the store
2 cups shredded mozzarella cheese
1/2 pkg of pepperoni (or your favorite pizza topping)
Opt: Parmesan cheese, cheddar, other toppings--but go easy with them
pizza sauce for dipping

Make (or open) your pizza dough.



Press it into a rectangle shape with your hands



Then roll out.  Not too thin or it will tear, but not real thick either, think Cinnamon Rolls



Sprinkle with mozzarella cheese



I like to quarter my pepperoni pieces... it kinda helps spread the love.

if you have it, you can add a touch of Parmesan and a sprinkle of cheddar 



Roll up cinnamon roll style



Pinch to seal and slice into rolls  (this is a double batch of dough, thus the mile long tube)

Fill your greased pan (I like to use a foil lined cookie sheet, sprayed with cooking spray)
and put directly into a 350 degree oven for 15 to 20 min, or till golden.
Don't worry about letting them rise, they puff up nicely!

Cool and freeze.  My boys love to dip them into pizza (or spaghetti) sauce on the side.


The go from freezer directly to lunch box and thaw by lunch.
Just having these in my freezer reduce my tendency to want to run out and grab something.  And the kids love them.

(Sorry my pics are so weird. It's a gray, overcast Oregon day, and it doesn't do nice things to the color on my pics.  But you should be able to get the idea...)
